How to cook Baby Back Pork Ribs using the Weekender
1. Secure the pork ribs between the meat racks (bone side up), using the 4 S-Hooks, and place it on the drip tray. Next, add a gallon of water to the drip tray. For extra flavor, you can add beer, wine, and spices to the water; I personally like to add a cup of our La Caja China Mojo Criollo.
2. Place drip tray with ribs inside the box, cover the box with the ash pan and grid and add 10 lbs of charcoal and light.Once lit (20 - 25 minutes), spread the charcoal evenly over the charcoal grid; Cooking time starts now. __________________ (write down the time).
3. After 1 hour:

- Remove the ash pan.
- Place it on top of the wire rack or tube handles.
- Flip the pork ribs over.
4. Now cover the box again add 4 - 5 lbs of charcoal and cook for another 30 to 45 minutes.
IMPORTANT: DO NOT OPEN THE BOX UNTIL THE REQUIRED TIME.
