INGREDIENTS
Serving Size
2 servings per lb of turkey
Per whole chicken:
1 tablespoon oregano
1 tablespoon bay leaves
1 garlic bulb1 teaspoon cumin
3 teaspoon salt
4 oz. of water
4 oz. Pineapple juice (optional) secret ingredient in our Mojo Criollo
** You can replace the sour orange juice with the following mix;
6 oz. orange juice
2 oz. lemon juice
STEPS
WATCH VIDEO - La Caja China Turkey
- Apply the La Caja China Cuban Style Mojo Marinating Sauce and La Caja China Cuban Style Adobo Criollo dry rub to the meat. Marinate for a minimum of 12 hours.
- Place Turkey on top of the rack breast down if cooking whole or skin down if cooking split, attached top rack using the 4 S-Hooks. Add 1 gallon of water to the drip tray, for extra flavor you can add beer or spices to the water, I personally like to add a cup of our La Caja China Mojo Criollo.
- Place Turkey inside the box, skin or breast down, attached the probe from the wired thermometer and run the wire under the short top frame
- Cover box with the ash pan and charcoal grid.

Add charcoal and light up. Once lit (20- 25 minutes) spread the charcoal evenly over the charcoal grid.
Weekender: 10 lbs. of charcoal
Model#1 Box: 16 lbs. of charcoal
Model#2 Box: 18 lbs. of charcoal - Cooking time starts right now.
- After 1 hour open the box by removing the complete set of ash pan and grid together and place it on top of the long handles.

Flip Turkey over, skin or breast side up. Now cover the box again and add more charcoal every hour until you reach 175 F meat thermometer.
Weekender: 5 lbs. of charcoal
Model#1 Box: 8 lbs. of charcoal
Model#2 Box: 9 lbs. of charcoal
IMPORTANT: Do not open the box until you reach the desired temperature.
Note: If you like you can brush a mix of butter, garlic and say sauce over the turkey after you reach 175 f. Just open the box brush the mixture and cover again with the charcoal tray for an extra 10 - 15 minutes.
