It all started on December 23, 1985

While marinating a pig for the next day’s roast, my father approached me with something unexpected: “You know,” he said, “I’ve seen a box in Cuba that can roast a pig in half the time… and it crisps the skin—guaranteed.” Naturally, I thought he was joking. “Charcoal on top?” I said. “Are you out of your mind?” But deep down, I knew—if my father said he saw it, it had to be true.
